As one of the most iconic fine dining restaurants in Hong Kong, Amber is also one of my top favourite restaurants. I have had some many special occasions here - for birthday, for work celebration and etcetc. Amber by  Chef Richard Ekkebus has also been proudly recognised for 15 consecutive years with two Michelin-stars and The Michelin Green Star since 2022. The consistency of delivering a high quality dining experience is just incredible. I had my 5th Amber experience lately and it was amazing. The kitchen experience of the Full Amber Experience menu was such a highlight! I love the "immersive" and interactive experience- the Amber team would showcase how they curated the dish in front of you and share about the philosophy.  Been to some really nice hotels in Singapore, but this one, the Capitol Kempinski Hotel Singapore just hit differently. I had this chance to stay at the beautiful Capitol Kempinski Hotel Singapore at the courtesy of the Singapore Tourism Board, and it was such a unique and luxurious experience. The Capitol Kempinski Hotel Singapore was restored from the Capitol Building and Stamford House, I LOVE the blend of contemporary design and historic landmarks, the in-room facilities/equipment were top-notch. The breakfast was exceptional with so many local Singaporean and Malaysian choices! Check out my captures below!

The Mandarin Oriental Hong Kong is the group's flagship property. It was so iconic with that classic oriental heritage vibes. The suite I was staying was very spacious with the stunning views of Victoria Harbour and Hong Kong's skyline. I really enjoyed an in-room meal facing the legendary Stature Square (their Hainan chicken rice and Laksa were just the city's best) I also had an afternoon tea at the hotel's freshly refurbished club lounge and it was so nice with an unique contemporary charm. The service was also top notch.

But the real highlight was totally the Chinese dinner I have had at Man Wah - the hotel's Michelin-starred Cantonese restaurant (another classic and one of my favourite Chinese restaurants in town).
